Koldskål (Danish Cold Buttermilk Soup)

Koldskål, literally cold bowl, is the Danish summer treat in a bowl: buttermilk and yogurt whisked with sugar, vanilla and lemon, served ice cold. It is eaten as a dessert or a light supper on warm days, usually with sliced strawberries and small crisp biscuits crumbled on top at the last moment. It needs no cooking and just ten minutes of work.

Instructions

  1. Stir the sugar and vanilla seeds into 100 ml (scant 1/2 cup) of the buttermilk until the sugar dissolves.
  2. Add the remaining buttermilk, the yogurt, lemon zest and lemon juice and whisk until smooth. Taste and add more sugar or lemon juice if you like.
  3. Cover and chill for at least 2 hours, until very cold.
  4. Pour into chilled bowls, add the strawberries and crumble the biscuits over each bowl just before serving, so they stay crunchy.

Tips

  • Serve it very cold and crumble the biscuits in at the table. They soften within minutes, which some people like, but most prefer them crisp.
  • The sweet and sour balance depends on your buttermilk. Taste before chilling and add sugar a spoonful at a time, because the flavor mellows as it chills.
