Kratzete, also called Tatsch or Kratzate, is the shredded pancake of Liechtenstein: a loose batter of milk, flour and eggs is cooked in a pan, torn into pieces with two forks, caramelized with a little sugar and dusted with powdered sugar. It looks like Kaiserschmarrn and is eaten the same way, warm, with stewed plums or apple sauce, as a sweet main course or a dessert.
Instructions
- Heat the oven to 200°C (400°F). Toss the plums with the sugar, water and cinnamon in a baking dish and roast for 20 to 25 minutes, until soft and syrupy. Keep warm.
- Whisk the flour, milk, eggs and salt until smooth and let the batter rest for 10 minutes.
- Melt 1 tbsp of the butter in a large skillet over medium heat. Pour in half the batter and swirl to cover the pan. Cook for 2 to 3 minutes, until the bottom is golden and the top is nearly set.
- Flip the pancake with a plate or wide spatula and cook for 1 to 2 minutes more. Tear it into bite-size pieces with two forks.
- Add 1 tbsp of butter and sprinkle with 1 tbsp of the granulated sugar. Cook for 2 to 3 minutes, turning the pieces now and then, until golden and lightly caramelized. Move to a warm plate.
- Repeat with the remaining batter, butter and sugar. Dust with the powdered sugar and serve at once with the roasted plums.
Tips
- Use a large skillet and a wide spatula, and do not worry about neat pieces. The torn, uneven edges are the point, because they caramelize and turn crisp.
- Apple sauce is the other traditional partner, and it takes minutes to make. Simmer 3 diced apples with 3 tbsp water and a spoonful of sugar until soft, then mash.
