Mixed Seafood Pasta with White Wine and Tomato

A mixed seafood pasta looks like a restaurant dish but follows the same quick logic as any pan sauce. Tomatoes, garlic and wine make the base, and the seafood goes in by cooking time: mussels first, then squid and shrimp for the last few minutes. The juices the mussels release season the sauce. Ask the fishmonger for a seafood mix if you do not want to buy three kinds separately.

Instructions

  1. Rinse the mussels, discard any cracked ones and any open ones that do not close when tapped, and pull off the beards. Pat the squid and shrimp dry and season with half the salt.
  2. Boil the pasta in generously salted water until 2 minutes short of al dente. Scoop out 250 ml (1 cup) of the cooking water, then drain.
  3. While the pasta cooks, heat the oil in a large, deep skillet or wide pot over medium heat. Add the garlic and chili flakes for 1 minute. Add the tomatoes and tomato paste and cook for 4 minutes, until the tomatoes start to burst.
  4. Pour in the wine, raise the heat to high and bring to a boil. Add the mussels, cover and cook for 3 minutes.
  5. Add the squid and shrimp, cover and cook for 2 to 3 minutes more, until the mussels have opened and the shrimp are pink and opaque (63°C / 145°F). Discard any mussels that stayed closed.
  6. Add the drained pasta, the remaining salt, the pepper, lemon juice and half the pasta water. Toss for 1 to 2 minutes, adding more water as needed, until the pasta absorbs the sauce.
  7. Scatter with parsley and serve at once in warm bowls.

Tips

  • Any mix of seafood works here: clams, mussels, shrimp and squid in a total of about 1 kg (2 1/4 lb) in the shell.
  • Add the squid only for the last 2 to 3 minutes. It is tender when cooked briefly or braised for a long time, but not in between.

Questions and answers

Can I use a frozen seafood mix?

Yes. Thaw it overnight in the fridge and pat it dry. Add it for the last 3 minutes of cooking, since the pieces are small and often precooked.

Should I add cheese to seafood pasta?

Most cooks leave it out, because cheese can overpower the delicate flavor of seafood. A squeeze of lemon and fresh parsley work better.

How do I keep the squid from turning rubbery?

Cook it for only 2 to 3 minutes at the end. Squid is tender when cooked briefly or braised for a long time, and tough in between.

How long does it take to make Mixed Seafood Pasta with White Wine and Tomato?

About 40 min in total: 20 min of preparation and 20 min of cooking.
