Mofo Gasy (Malagasy Rice Flour Breakfast Cakes)

Mofo gasy means Malagasy bread, and it is the morning snack sold from street stalls alongside coffee. A lightly sweet rice flour batter is poured into round molds and cooked over charcoal until the outside is golden and the middle is soft. At home a dimpled cake pan or a nonstick skillet does the job. The cakes are eaten warm, plain or with a smear of jam, and the batter takes only a few minutes to mix.

Instructions

  1. Whisk the rice flour, sugar, salt and yeast in a bowl. Pour in the warm water and vanilla and whisk to a smooth batter that pours slowly, like thick pancake batter.
  2. Cover and leave in a warm place for 1 hour, until the surface is bubbly and the batter smells lightly yeasty.
  3. Heat a dimpled cake pan or a nonstick skillet over medium heat and brush well with oil.
  4. Stir the batter, then pour about 3 tablespoons into each dimple, or into the skillet in small rounds, filling the dimples about three-quarters full.
  5. Cover and cook for 4 minutes, until the underside is golden and the top has set at the edges. Flip and cook for 3 minutes more, until the cakes are golden all over.
  6. Serve warm with coffee or tea.

Tips

  • The batter thickens as it stands. Whisk in a tablespoon of water at a time until it pours slowly again.
  • For the coastal version called mokary, replace the water with coconut milk and add a pinch more sugar.
