Tofu and Potato Breakfast Hash

A hash is simply fried potatoes with whatever else needs using up, and this one gets its protein from crumbled tofu. The potatoes are boiled briefly first, which means they brown fast and stay fluffy inside. Onion, pepper, smoked paprika and a little turmeric give the pan color and warmth. It works as a weekend brunch, but it also makes a quick dinner when topped with sliced avocado or a drizzle of hot sauce.

Instructions

  1. Put the potatoes in a pan of salted water, bring to a boil and cook for 5 minutes until just tender at the edges. Drain well and let them steam dry for 2 minutes.
  2. Heat 2 tablespoons of the oil in a large cast-iron or nonstick skillet over medium-high heat. Add the potatoes in a single layer and cook for 8 to 10 minutes without stirring much, until golden on the bottom.
  3. Turn the potatoes and cook 5 more minutes. Push them to one side and add the last tablespoon of oil, then the onion and pepper.
  4. Cook the vegetables for 4 minutes, until the onion softens, then stir in the garlic, paprika, cumin and turmeric for 30 seconds.
  5. Add the crumbled tofu, salt and pepper and stir everything together. Cook for 5 minutes, letting the tofu take color and the potatoes crisp up again.
  6. Taste and adjust the salt. Scatter with parsley and serve hot, with hot sauce on the side if you like.

Tips

  • Do not stir the potatoes too soon. Letting them sit against the hot pan is what builds the crust.
  • Make it heartier with a can of drained black beans, or add handfuls of kale in the last 2 minutes.

Questions and answers

Can I make breakfast hash in advance?

You can cook the potatoes a day ahead and keep them in the fridge, then finish the hash in the pan. A fully cooked hash also reheats well in a skillet within 3 days.

Which potatoes are best for hash?

Waxy or all-purpose types such as Yukon Gold or red potatoes hold their shape and brown nicely. Floury potatoes break up and turn mushy.

Can I skip the boiling step?

You can, but raw potato cubes need 20 to 25 minutes in the pan and brown unevenly. A quick boil makes the hash faster and fluffier inside.
