Fattet hummus is a warm, layered Lebanese dish of crisp pita, soft chickpeas and cool garlic yogurt, finished with pine nuts sizzled in butter. The contrast of hot and cold, crunchy and creamy is the whole point. It is often eaten at breakfast or brunch, and it also works as a light supper or a shared dish on the table. Assemble it at the last minute so the bread keeps some crunch.
Instructions
- Heat the oven to 200°C (400°F). Toss the pita pieces with the olive oil, spread them on a baking sheet and bake for 8 to 10 minutes, turning once, until golden and crisp. Cool on the sheet.
- Put the chickpeas, cooking liquid, cumin and 1/2 tsp salt in a saucepan. Heat over medium heat for 6 to 8 minutes, until steaming hot, and keep warm.
- Whisk the yogurt, tahini, garlic paste and lemon juice in a bowl until smooth. If it is too thick to pour, whisk in 1 to 2 tbsp of water.
- Melt the butter in a small pan over medium heat. Add the pine nuts and stir for 2 to 3 minutes, until golden. Take the pan off the heat and stir in the paprika.
- Spread the pita in a shallow serving dish. Spoon the warm chickpeas over it, with a little of their liquid to soften the bread slightly.
- Pour the garlic yogurt over the chickpeas, then spoon the sizzling pine nuts and butter on top. Scatter with parsley and serve right away.
Tips
- Assemble just before eating, because the pita softens within minutes. For a party, layer the pita, chickpeas and yogurt in individual bowls.
- Simmer canned chickpeas in their liquid for 10 minutes first, which makes them softer and creamier. Dried chickpeas should be cooked until they crush easily between your fingers.
Questions and answers
Is there hummus dip in fattet hummus?
The name refers to the whole chickpeas, as hummus is the Arabic word for them. Some cooks mash a few into the yogurt for a creamier layer.
Can I prepare it ahead?
Prepare the parts up to 2 days ahead. Keep the pita in an airtight container and the chickpeas and yogurt sauce in the fridge, then warm the chickpeas and assemble just before serving.
Can I make it vegan?
