Freezer French Toast Sticks

French toast sticks are one of the easiest foods to cook ahead, because they freeze and reheat well. Day-old bread is cut into fingers, soaked briefly in a cinnamon-vanilla custard and pan-fried in butter. Once frozen on a tray, they stay separate in a bag and go from freezer to plate in about ten minutes. Dip them in maple syrup, yogurt or fruit puree.

Instructions

  1. Trim the crusts from the bread if you like. Cut each slice into 3 equal sticks.
  2. Whisk the eggs, milk, sugar, vanilla, cinnamon and salt together in a wide, shallow dish until no streaks of egg remain.
  3. Dip a few sticks at a time into the custard for about 5 seconds per side, until moistened but not soggy. Let the excess drip off.
  4. Melt 1 tablespoon of butter in a large nonstick pan over medium heat. Fry the sticks in batches for 2 to 3 minutes per side, until deep golden and the egg is fully set. Add more butter between batches.
  5. Cool the sticks on a wire rack for 15 minutes. Freeze them in a single layer on a lined tray for about 1 hour, until solid.
  6. Pack the frozen sticks into a freezer bag and press out the air. Keep for up to 2 months.
  7. To serve, bake from frozen at 190°C (375°F) for 8 to 10 minutes, turning once, or toast them in a toaster oven. Serve with maple syrup, yogurt or fruit for dipping.

Tips

  • Use slightly stale bread. Fresh bread soaks up too much custard and goes soggy, so dry fresh slices in a 150°C (300°F) oven for 5 minutes first.
  • Freeze the sticks in a single layer before bagging, or they clump together. Reheat in a toaster oven or oven for crisp edges, because the microwave makes them soft.

Questions and answers

How do I reheat frozen French toast sticks?

Bake from frozen at 190°C (375°F) for 8 to 10 minutes, or toast them in a toaster oven. The microwave takes about 45 seconds but leaves them softer.
