Morning Glory Muffins with Carrot, Apple and Coconut

Morning glory muffins are a fruit-and-vegetable muffin built for breakfast. Grated carrot and apple keep the crumb moist, raisins and coconut add sweetness and chew, and nuts give crunch. The batter is chunky rather than smooth, and oil takes the place of butter, so the muffins stay soft for days. One is filling enough to eat on the way out the door.

Instructions

  1. Heat the oven to 175°C (350°F). Line a 12-cup muffin pan with paper liners.
  2. Whisk the flour, brown sugar, baking soda, baking powder, cinnamon and salt in a large bowl, breaking up any lumps of sugar.
  3. Stir in the carrot, apple, raisins, coconut and nuts until everything is coated in the flour mixture.
  4. In a jug, whisk the eggs, oil, orange juice and vanilla until smooth. Pour over the dry mixture and fold until just combined. The batter will be thick and chunky.
  5. Divide the batter among the cups, filling them to the top. Sprinkle a little extra coconut over the tops if you like.
  6. Bake for 25 to 28 minutes, until the tops are firm and golden and a toothpick comes out clean.
  7. Cool in the pan for 5 minutes, then move the muffins to a rack.

Tips

  • If the grated apple and carrot look wet, press them lightly in a clean towel before adding them. Too much liquid makes the muffins heavy.
  • Swap the raisins for chopped dates or dried cranberries, and use sunflower seeds instead of nuts for a nut-free version.
