Nakládaný hermelín is a Czech pub snack: soft white-rind cheese, similar to Camembert, marinated in oil with sliced onion, garlic, chili and bay for several days. The marinade softens the cheese and makes it spicy and fragrant. Served at room temperature with dark rye bread and a cold beer, it is rich and sharp, so a small piece goes a long way. Plan on at least three days of marinating.
Instructions
- Cut each cheese in half horizontally into two discs, or leave them whole and cut a few deep slits across the top. Pat dry with a paper towel.
- Layer the cheese in a clean 1 liter (4 cup) jar or container, alternating with the onion rings, garlic, chili, peppercorns, allspice, bay leaves and paprika.
- Pour in enough oil to cover everything completely, pressing the cheese down so no piece pokes above the surface.
- Close the jar and refrigerate for at least 3 days and up to 1 week, turning the jar gently once a day.
- Take the cheese out of the fridge 30 minutes before serving and lift it out with some of the onion and chili.
- Serve at room temperature with dark rye bread, spreading the soft cheese on the slices and drizzling over a little of the oil.
Tips
- Keep the jar in the fridge the whole time and finish it within a week. Garlic and fresh vegetables stored in oil at room temperature can grow dangerous bacteria.
- Choose young, firm cheeses that are not too ripe, because very ripe cheese turns runny. Slice the onion thinly so it softens in the oil.
