Nut-Free Seed and Coconut Granola

Most granola leans on nuts, which keeps it out of many lunchboxes and classrooms. This version gets its crunch from pumpkin seeds, sunflower seeds and coconut flakes instead, bound with honey and coconut oil and baked until golden. It tastes toasty and lightly sweet, and it works the same way as any other granola: on yogurt, in a bowl with milk or packed into a snack bag.

Instructions

  1. Heat the oven to 150°C (300°F) and line a large rimmed baking sheet with parchment paper.
  2. Stir the oats, pumpkin seeds, sunflower seeds, coconut flakes, cinnamon and salt together in a large bowl.
  3. Warm the honey and coconut oil together for 30 seconds in the microwave, or for 1 minute in a small saucepan, until runny. Stir in the vanilla.
  4. Pour over the oat mixture and mix well until everything is evenly coated. Spread on the baking sheet and press into an even layer.
  5. Bake for 30 to 35 minutes, stirring gently once after 15 minutes, until golden. The coconut browns quickly, so check it from the 25-minute mark.
  6. Cool completely on the pan, then stir in the dried fruit if you are using it. Store in an airtight jar.

Tips

  • Use large unsweetened coconut flakes or chips. Fine desiccated coconut burns before the oats are toasted.
  • Check the labels on oats, seeds and coconut for a 'may contain nuts' warning, since they are often packed in facilities that also handle nuts.

Questions and answers

Is this granola safe for nut allergies?

The recipe contains no tree nuts or peanuts, but oats and seeds are often processed alongside nuts. Buy brands labeled nut-free if the allergy is serious, and ask your doctor whether coconut is acceptable too.

Can I use other seeds?

Yes. Hemp seeds, flaxseeds and sesame seeds all work. Keep the total seed weight the same, and limit small seeds such as chia to 1 or 2 tablespoons.

How can I make this granola vegan?

Replace the honey with maple syrup or brown rice syrup in the same amount. Everything else in the recipe is already plant-based.
