Winter oranges, soft avocado and sharp red onion make a bright salad that needs no leaves at all. The fruit is cut into rounds so every layer shows, and a dressing of lime juice, olive oil and chili flakes picks up the sweetness of the oranges. Serve it with grilled fish or chicken, or on its own for lunch with warm bread. Make it just before serving, because cut avocado darkens.
Instructions
- Cut the top and bottom off each orange and stand it upright. Slice away the peel and white pith in strips, following the curve of the fruit.
- Slice the oranges crosswise into 5 mm (1/4 inch) rounds, pick out any seeds and arrange them on a wide platter. Save the juice that collects on the board.
- Soak the red onion slices in cold water for 5 minutes, then drain and pat dry.
- Halve the avocados, remove the stones, peel and slice the flesh. Tuck the slices between the orange rounds.
- Whisk the lime juice, olive oil, orange juice, chili flakes and salt in a small bowl.
- Scatter the onion, cilantro and pumpkin seeds over the salad, spoon over the dressing and serve immediately.
Tips
- Choose heavy oranges with thin skin, such as navel, blood or Cara Cara. A mix of colors looks striking on the platter.
- To make it more filling, add arugula, cooked quinoa or a few chickpeas. Black olives also go well with orange.
