Oromo (Kyrgyz Steamed Meat and Potato Roll)

Oromo is a steamed roll of thin dough wrapped around a juicy filling. Kyrgyz families make it for family dinners, and it looks impressive when sliced into spirals. The dough is rolled very thin, brushed with oil and spread with a filling of beef, potato, onion and carrot. Steaming keeps everything soft and moist. Serve it with sour cream or a bowl of hot broth.

Instructions

  1. Mix the flour, salt and warm water and knead for 8 minutes until smooth. Cover and rest for 30 minutes.
  2. Mix the beef, potatoes, onions, carrot, salt, pepper and water until well combined.
  3. Divide the dough in two. Roll one piece into a thin rectangle about 35 x 30 cm (14 x 12 in) and brush with oil.
  4. Spread half the filling over the dough in a thin layer, leaving a 2 cm (3/4 in) border along one long edge.
  5. Roll up tightly from the opposite long side, pinch the seam and ends closed, and place seam down. Repeat with the second piece of dough.
  6. Oil a steamer basket well and set the rolls inside, coiling them into spirals if they are too long. Steam over boiling water for 45 to 50 minutes. The filling should reach 71°C (160°F).
  7. Rest for 5 minutes, then slice into thick rounds. Serve with sour cream and dill if you like.

Tips

  • Cut the potatoes very small, about 5 mm (1/4 in), or they will stay firm while the dough is done.
  • Pumpkin or cabbage can replace the meat for a vegetarian roll. Salt and squeeze the cabbage first to remove excess water.
