Pad See Ew (Thai Wide Noodles with Soy Sauce)

Pad see ew means noodles stir-fried with soy sauce, and it is the mild noodle dish Thai children grow up on. Wide rice noodles hit a very hot pan until the edges char slightly, then pick up a glossy sauce of dark and light soy with a little sugar. Pork, egg and Chinese broccoli are the usual partners. The smoky edge matters more than anything, so use your largest pan and cook only two portions at once.

Instructions

  1. Toss the pork with the 1 teaspoon of light soy sauce and the cornstarch. Mix the dark soy sauce, light soy sauce, oyster sauce, sugar, pepper and water for the sauce.
  2. If the fresh noodles are stuck together, loosen them gently with your hands. Do not tear them.
  3. Heat 1 tablespoon of oil in a very hot wok or large skillet. Fry the garlic for 10 seconds, then add the pork and stir-fry for 2 minutes, until just cooked through.
  4. Push the pork aside, add the remaining oil and crack in the eggs. Let them set for 15 seconds, then scramble roughly.
  5. Add the noodles and sauce. Spread the noodles out and leave them alone for 30 to 45 seconds so the underside chars, then toss. Repeat twice.
  6. Add the Chinese broccoli stems and cook for 1 minute. Add the leaves and toss for 30 seconds until they wilt but stay bright green.
  7. Serve straight away with a sprinkle of white pepper, and sugar, vinegar with chilies and chili flakes on the table.

Tips

  • Cold fresh noodles break easily, so warm the packet in a microwave for 20 to 30 seconds, then separate them. Dried noodles should be soaked in warm water until pliable but firm.
  • No Chinese broccoli? Use broccolini or regular broccoli cut into small florets and blanched first. Chicken or shrimp can stand in for the pork.
