Pantry Salmon Patties with Lemon Yogurt Sauce

Canned salmon is a cheap, shelf-stable way to get fish on the table, and patties are the easiest way to use it. A little egg and breadcrumb holds the flakes together, mustard and lemon zest brighten the flavor, and a short pan-fry gives a crisp crust. Many families keep the ingredients on hand for busy nights. Serve the patties with salad, peas or on a toasted bun.

Instructions

  1. Drain the salmon well and tip it into a bowl. Flake it with a fork, mashing in any soft bones, which are edible and add calcium.
  2. Add the egg, breadcrumbs, spring onions, parsley, mustard, lemon zest and pepper. Mix gently until the mixture holds together when squeezed. If it feels wet, add a spoonful more breadcrumbs.
  3. Shape the mixture into 8 patties, each about 2 cm (3/4 inch) thick. Set them on a plate and chill for 15 minutes so they firm up.
  4. Stir the yogurt, lemon juice, garlic, dill and salt together in a small bowl and set aside.
  5. Heat the oil in a large nonstick skillet over medium heat. Fry the patties in two batches for 3 to 4 minutes per side, until deep golden and hot in the center (74°C / 165°F).
  6. Drain the patties on paper towels for a minute and serve warm with the yogurt sauce.

Tips

  • Canned tuna or about 400 g (14 oz) of cooked fresh salmon works in place of the canned salmon.
  • To bake instead of fry, set the patties on an oiled sheet at 200°C (400°F) for 18 minutes, turning once halfway.

Questions and answers

Why do my salmon patties fall apart?

The mixture is usually too wet. Drain the fish very well, add a little more breadcrumb and chill the patties before frying.

Can I freeze salmon patties?

Yes. Freeze the shaped raw patties on a tray, then bag them for up to 2 months. Fry from frozen over medium-low heat for 5 to 6 minutes per side.

What goes well with salmon patties?

A green salad, steamed peas, boiled potatoes or a toasted bun all work. Add lettuce and a tomato slice and they become salmon burgers.
