Pork and Apple Burgers with Sage

Pork has a mild sweetness that goes well with apple and sage, and this burger takes the idea into a bun. Grated apple keeps the patties moist and adds a faint sweetness, while sage and a little onion bring a savory edge. Pork can dry out, so the patties are cooked just to 71°C (160°F) and not beyond. A quick mustard mayonnaise and a handful of crisp leaves keep the sandwich fresh. Serve with a slaw or oven fries.

Instructions

  1. Mix the pork, grated apple, onion, sage, salt and pepper with your hands until just combined.
  2. Divide the mixture into 4 portions and shape each into a patty about 11 cm (4 1/2 inches) wide and 2 cm (3/4 inch) thick, with a shallow dimple in the middle. Chill for 15 minutes.
  3. Stir the mayonnaise and mustard together in a small bowl.
  4. Heat the oil in a large skillet over medium-high heat. Cook the patties for 5 to 6 minutes per side, until browned and a thermometer reads 71°C (160°F).
  5. Rest the patties for 2 minutes while you toast the buns.
  6. Spread the buns with the mustard mayonnaise, add lettuce, the patties and apple slices, and serve.

Tips

  • Squeeze the grated apple in a clean cloth so it does not make the mixture wet.
  • Cheddar or blue cheese on top suits pork and apple. Add a slice in the last minute of cooking.
