Porotos granados is the Chilean stew of late summer, when fresh shelling beans, tender corn and pumpkin all arrive at the market together. The onion is cooked in oil with paprika, then the beans simmer slowly with squash until part of the pumpkin dissolves and thickens the pot. Fresh basil goes in at the end. It is served with a spoon of pebre or a salad of tomato and onion.
Instructions
- Put the drained beans in a large pot with the water. Bring to a boil and boil hard for 10 minutes, then simmer gently, partly covered, for 35 minutes more, until the beans begin to soften.
- Meanwhile, heat the oil in a skillet over medium heat and cook the onions for 10 minutes until soft and golden. Add the garlic, paprika, cumin and oregano and cook for 1 minute, stirring so the paprika does not burn.
- Stir the onion mixture into the beans and add the pumpkin and salt. Simmer for 20 minutes, until the beans are tender and the pumpkin is soft.
- Add the corn and simmer for 10 minutes more. Mash some of the pumpkin against the side of the pot to thicken the stew.
- Stir in the basil, taste and adjust the salt. Serve hot with pebre or a tomato and onion salad.
Tips
- With fresh shelled beans, skip the soaking. They cook in 30 to 40 minutes, so add the onion mixture and pumpkin earlier. Frozen shelled beans work too.
- The stew thickens as it stands, so thin it with hot water when reheating. A pinch of merkén or chili flakes adds gentle heat.
