Puff Pastry Apple Tart

This apple tart is the dessert to make when you want something that looks bakery-made in under an hour. Store-bought puff pastry gives the crisp, flaky base, and thin apple slices fanned over it need nothing more than butter, a little sugar and a shiny apricot glaze. It is a flat tart baked on a sheet pan, so there is no tin to line and no pastry to roll. It is best on the day it is baked, warm or at room temperature.

Instructions

  1. Heat the oven to 200°C (400°F) with a baking sheet inside. Toss the apple slices with the lemon juice in a bowl.
  2. Unroll the pastry onto a sheet of parchment paper. With the tip of a knife, lightly score a border 2 cm (3/4 in) from the edge without cutting through. Prick the area inside the border all over with a fork.
  3. Arrange the apple slices in overlapping rows inside the border. Brush with the melted butter and sprinkle with the sugar and cinnamon.
  4. Brush the border with the egg wash. Slide the parchment onto the hot baking sheet.
  5. Bake for 25 to 30 minutes, until the pastry is deep golden and puffed and the apple edges are browned.
  6. Brush the apples with the warm apricot glaze while the tart is still hot. Slice into 8 pieces and serve warm or at room temperature.

Tips

  • Slice the apples thin, about 3 mm, so they soften in the time the pastry takes to bake. A mandoline makes this quick and even.
  • Keep the pastry cold. If it softens as you work, chill the assembled tart on its tray for 10 minutes before baking, so it puffs well.

Questions and answers

Which apples are best for a puff pastry tart?

Use firm apples that hold their shape and are not watery, ideally a balance of tart and sweet. Soft or mealy apples turn mushy and wet.

Why is the bottom of my apple tart soggy?

The apples were sliced too thick or the oven was not hot enough. Bake on a preheated sheet, slice thinly and scatter 1 tablespoon of ground almonds under the apples to absorb the juices.

Can I make an apple tart ahead of time?

It is best baked the same day. You can assemble it up to 3 hours ahead and keep it chilled, then bake it from cold. Leftovers can be re-crisped in a hot oven.
