Pumpkin spice lattes are an autumn ritual for many people, and the home version is very good. Cooking real pumpkin puree with sugar and spices in a little milk gives a deeper, rounder flavor than flavored syrup does. Strong coffee cuts through the sweetness. You need one small pan, a whisk and ten minutes, and you can adjust the sugar and spice to taste.
Instructions
- Brew the coffee or espresso and keep it hot.
- In a small saucepan, whisk the pumpkin puree, brown sugar, spice and salt with 60 ml (1/4 cup) of the milk. Cook over medium-low heat for 2 minutes, stirring, until the mixture bubbles gently and the sugar dissolves.
- Whisk in the rest of the milk a little at a time. Heat for 4 to 5 minutes, stirring often, until steaming. Do not let it boil.
- Take the pan off the heat, stir in the vanilla and whisk hard for 30 seconds to make the milk foamy.
- For a perfectly smooth latte, pour the pumpkin milk through a fine sieve into a jug.
- Divide the hot coffee between two large mugs, pour the pumpkin milk over it and top with whipped cream and a pinch of spice.
Tips
- Use plain pumpkin puree, not pumpkin pie filling, which is already sweetened and spiced. Butternut squash or sweet potato puree also works.
- For a dairy-free latte, use oat milk, and strain the finished milk through a fine sieve if you want a perfectly smooth texture.
