Ravioles are a Cypriot filled pasta, with a filling of the island's cheese: halloumi, grated fine and mixed with ricotta or anari and plenty of dried mint. They are boiled and served with melted butter and grated cheese, or in chicken broth, and they appear at Sunday lunches and on festive tables. The dough is simple and the shaping is quick once you find a rhythm.
Instructions
- Mound the flour and salt on the counter or in a bowl and make a well. Add the eggs and oil, mix with a fork, then knead for 8 minutes until smooth, adding water by the teaspoon if the dough is dry. Wrap and rest for 30 minutes.
- Mix the halloumi, ricotta, mint, egg yolk and pepper into a thick, even paste.
- Roll the dough out very thin, about 1 mm (1/32 in), in two batches. Cut rounds with an 8 cm (3 in) cutter and reroll the scraps.
- Put a heaped teaspoon of filling in the center of each round. Fold into a half-moon, press out the air and seal the edges firmly, using a fork if you like. Set them on a floured tray.
- Boil the ravioli in batches in a large pot of salted water for 4 to 5 minutes, until they float and the dough is tender. Lift them out with a slotted spoon.
- Melt the butter in a pan over medium heat for about 3 minutes, until foaming and golden brown. Toss the ravioli in the butter, scatter over the grated cheese and mint, and serve at once.
Tips
- Press the air out before sealing each ravioli, or they can burst in the water.
- Anari is a fresh whey cheese similar to ricotta. If you cannot find it, well-drained ricotta works well.
