Salam de Biscuiți (Romanian Chocolate Biscuit Salami)

Ask a Romanian about childhood sweets and many will mention salam de biscuiți. Broken biscuits, cocoa, butter and walnuts are bound together, rolled into a log that looks like a salami and chilled until sliceable. A dusting of powdered sugar finishes the illusion. No oven or egg is needed, so children can help, and the log keeps well in the fridge for a week or more.

Instructions

  1. Break the biscuits into pieces about 1 cm (1/2 in) across by crushing them in a bag with a rolling pin. Leave some chunks, because they give the salami its marbled look. Tip them into a large bowl with the walnuts and raisins.
  2. In a small saucepan, melt the butter with the sugar, cocoa and milk over low heat, stirring until smooth and the sugar has dissolved, about 3 minutes. Do not let it boil hard.
  3. Cool the chocolate mixture for 10 minutes, then stir in the rum or vanilla.
  4. Pour it over the biscuits and mix until every piece is coated and the mixture sticks together when pressed.
  5. Spoon the mixture onto a sheet of baking paper and shape it into a log about 25 cm (10 in) long. Roll it up tightly in the paper, squeeze it firm and twist the ends like a candy wrapper.
  6. Chill for at least 4 hours, or freeze for 1 hour, until firm. Unwrap, roll the log in the powdered sugar and cut it into 1 cm (1/2 in) slices.

Tips

  • Use dry, plain biscuits, not filled or very sweet ones. Digestive-style or simple butter biscuits hold the shape best.
  • For children, use vanilla instead of rum. You can also swap the raisins for shredded coconut, or roll the log in cocoa instead of powdered sugar.

Questions and answers

How long does salam de biscuiți keep?

Up to 10 days in the fridge, wrapped. You can also freeze the log for 2 months and slice it straight from the freezer.

Can I use other biscuits?

Yes, any plain, dry biscuit or cookie works. Avoid cream-filled ones, which make the log greasy and too sweet.

Is there raw egg in it?

Not in this version. The butter, cocoa, sugar and milk are warmed together, so the mixture is safe for children and keeps well.
