Bowls like this are a smart weeknight habit: roast the fish and broccoli together on one tray while the rice cooks, then dress everything with a quick sauce. The sesame dressing balances salty soy with rice vinegar and a little honey. Leftovers pack well for lunch, with the dressing kept separate. Swap in any vegetable that roasts in about 15 minutes.
Instructions
- Rinse the rice until the water runs mostly clear. Cook it with 540 ml (2 1/4 cups) water and a pinch of salt for 12 to 15 minutes, then rest it covered for 10 minutes.
- Heat the oven to 220°C (425°F). Toss the broccoli with half the oil and 1/4 tsp of the salt on a large baking sheet and roast for 8 minutes.
- Whisk the dressing ingredients in a small bowl until the honey dissolves.
- Pat the salmon dry, rub it with the remaining oil and salt, and push the broccoli aside to make room. Spoon 1 tablespoon of dressing over each fillet.
- Roast for 9 to 11 minutes, until the broccoli is charred at the edges and the salmon flakes and reads 63°C (145°F) at the thickest part.
- Fluff the rice and divide it among four bowls. Top with salmon, broccoli and cucumber, drizzle with the remaining dressing and scatter with spring onions and sesame seeds.
Tips
- Cook extra rice and roast extra broccoli for lunch the next day, and keep the dressing in a small jar.
- Green beans or asparagus can replace the broccoli. Shorten the roasting time by a few minutes.

Can I use brown rice instead?
Yes, but it needs 35 to 40 minutes, so start it earlier so it is ready when the salmon comes out of the oven.
Is the sesame dressing spicy?
