Sándwiches de miga are the sandwiches of Argentine birthday parties, afternoon teas and office meetings: very thin, soft, crustless white bread layered with ham, cheese and sometimes tomato, lettuce or egg. The name refers to miga, the soft crumb of the bread. Sandwiches are built in two or three layers, cut into small rectangles and stacked on a platter under a damp cloth. They are served cold, and they are best made a few hours ahead so the bread softens and the fillings settle.
Instructions
- Trim the crusts from the bread with a serrated knife. Lay out all 12 slices and spread one side of each with butter.
- Build 4 stacks. For each, set a slice buttered side up and layer on a quarter of the ham and cheese. Cover with a second slice, buttered side up.
- Spread the second slice with a little mayonnaise. Add a quarter of the tomato slices, a pinch of salt and 2 lettuce leaves.
- Top with a third slice, buttered side down, and press gently so the layers hold together.
- Wrap the stacks in a damp kitchen towel, then in plastic wrap. Refrigerate for at least 2 hours.
- With a serrated knife, cut each stack into 4 small rectangles. Arrange on a platter and serve cold.
Tips
- Use very soft, thin-sliced white bread. Firm or whole grain bread cracks when you trim and cut it, and does not give the melt-in-the-mouth texture.
- Other classic fillings are hard-boiled egg with olives, tuna with mayonnaise, and hearts of palm with cheese. Dry any wet ingredients well first.
