Schwäbischer Kartoffelsalat (Swabian Warm Potato Salad)

In Swabia, potato salad is dressed with hot broth, not mayonnaise. The potatoes are sliced while still warm and soak up a dressing of broth, vinegar, mustard and a little oil, which makes them tender and slightly silky. It is served warm or at room temperature next to schnitzel, sausages or fried fish. Use waxy potatoes so the slices hold their shape.

Instructions

  1. Boil the unpeeled potatoes in salted water for 20 to 25 minutes, until a knife slides in easily. Drain.
  2. While still hot, peel the potatoes, holding them in a cloth. Slice them 5 mm (1/4 inch) thick into a large bowl.
  3. Stir the mustard, vinegar, sugar, salt and pepper into the hot broth until dissolved. Pour it over the warm potatoes, add the onion and toss gently without mashing.
  4. Let the salad stand for 15 minutes so the potatoes absorb the broth. If it looks dry, add a little more hot broth. It should be moist, but not soupy.
  5. Stir in the oil and chives, taste and adjust the salt and vinegar. Serve slightly warm or at room temperature.

Tips

  • Use waxy potatoes that keep their shape, and slice them while warm so they take up the dressing. Cold potatoes absorb very little.
  • Use a well-flavored vegetable broth, because the broth is the main seasoning. In some regions cooks add sliced cucumber.
