Sesame Ginger Dressing

This is the dressing that makes a plain cabbage slaw, a bowl of cold noodles or a tray of roasted vegetables taste complete. Toasted sesame oil gives depth, rice vinegar and lime keep it light, and fresh ginger and garlic add warmth. It is vegan, takes five minutes and is thin enough to pour. Because sesame oil is strong, it is used in a small amount and balanced with a neutral oil.

Instructions

  1. Peel the ginger with the edge of a spoon and grate it on a fine grater. Grate the garlic as well.
  2. Put the ginger, garlic, rice vinegar, tamari, lime juice and maple syrup in a jar. Stir until the syrup dissolves.
  3. Add the sesame oil and the neutral oil. Close the lid and shake hard for 20 seconds, until the dressing looks cloudy and slightly thickened.
  4. Stir in the sesame seeds. Taste it on a piece of cabbage or cucumber, adding lime juice if it needs brightness or a splash of water if it is too salty.
  5. Let the dressing stand for 10 minutes so the garlic and ginger flavor the liquid. Shake again and pour over salad, noodles or vegetables.

Tips

  • For a creamy version, blend the dressing with 1 tablespoon of tahini or smooth peanut butter and 1 tablespoon of water until smooth.
  • Regular soy sauce works if you do not need it gluten-free. Add a pinch of chili flakes or a few drops of chili oil for heat.
