Sheet-Pan Garlic Shrimp with Green Beans and Tomatoes

This sheet-pan dinner uses a simple order of operations: the green beans and tomatoes go in first, and the shrimp join them for the last few minutes, so nothing overcooks. The tomatoes burst and make a light sauce, and the garlic and smoked paprika flavor the oil. Serve it with rice, crusty bread or couscous to catch the juices. It is ready in about thirty-five minutes and makes only one pan to wash.

Instructions

  1. Heat the oven to 220°C (425°F) and put a large rimmed sheet pan inside to heat.
  2. Toss the green beans and tomatoes with 2 tablespoons of the oil and 1/2 teaspoon of salt. Spread them on the hot pan and roast for 12 minutes, until the beans are blistered and the tomatoes have started to burst.
  3. Meanwhile, pat the shrimp dry and toss them with the remaining oil, garlic, paprika, 1/4 teaspoon of salt and the chili flakes.
  4. Take the pan out and push the vegetables to the sides. Spread the shrimp in a single layer in the center.
  5. Roast for 5 to 7 minutes, until the shrimp are pink and opaque and curled into a loose C shape.
  6. Squeeze over the lemon juice, add the zest and parsley, toss lightly and serve right away.

Tips

  • Do not skip drying the shrimp. Wet shrimp steam in the pan and turn watery instead of roasting.
  • Larger shrimp take a minute or two longer, and small ones cook in 3 to 4 minutes, so watch them closely.
