Sheet-Pan Rosemary Lamb Chops with Potatoes and Green Beans

Lamb chops feel like a special dinner, and the sheet pan makes them easy enough for a weeknight. The potatoes roast first until crisp, then the chops and green beans join them for the last ten minutes, so the meat stays rosy and juicy. Rosemary, garlic and lemon zest are the classic seasonings, and the pan juices make their own sauce. Serve with lemon wedges and a simple salad.

Instructions

  1. Rub the lamb chops with the oil, garlic, rosemary, lemon zest, 1/2 teaspoon of salt and the pepper. Leave them at room temperature for 15 minutes.
  2. Heat the oven to 220°C (425°F). Toss the potatoes with the oil, 1/2 teaspoon of salt and the rosemary on a large rimmed sheet pan, cut sides down.
  3. Roast the potatoes for 20 minutes until golden underneath.
  4. Toss the green beans with the oil and 1/4 teaspoon of salt. Take out the pan, push the potatoes to one side and add the beans and the chops in a single layer.
  5. Roast for 8 to 10 minutes, turning the chops once, until they read 63°C (145°F) in the thickest part for medium.
  6. Rest the chops for 5 minutes loosely covered, then serve with the potatoes, beans, pan juices and lemon wedges.

Tips

  • Pat the chops dry before rubbing them so they brown on the hot pan instead of steaming. The browned surface is where the flavor is.
  • Thinner chops cook in 6 to 7 minutes, so check early. Boneless lamb leg steaks also work.
