Sheet-Pan Salmon and Asparagus with Lemon Butter

Salmon and asparagus cook at nearly the same speed, which makes them a natural pair for a sheet pan. The fillets roast skin side down so they stay moist, while the asparagus browns at the edges. A quick lemon and garlic butter, brushed on before roasting and spooned over at the end, makes a simple sauce with no extra pan to wash. The whole dinner takes about twenty-five minutes and serves four.

Instructions

  1. Heat the oven to 220°C (425°F) and line a large rimmed sheet pan with parchment.
  2. Toss the asparagus with the olive oil and 1/4 teaspoon of the salt and spread it along one side of the pan. If the spears are thicker than your little finger, roast them alone for 4 minutes first.
  3. Pat the salmon dry and season with the remaining salt and the pepper. Place the fillets skin side down on the other side of the pan and top each with a lemon slice.
  4. Stir the melted butter with the garlic, lemon zest and lemon juice. Brush about half of it over the salmon.
  5. Roast for 10 to 12 minutes, until the salmon flakes easily and reads 63°C (145°F) in the thickest part and the asparagus is tender with browned tips.
  6. Spoon the rest of the lemon butter over the fish and asparagus, scatter with herbs and serve at once.

Tips

  • Thin tail pieces cook faster. Tuck the thin end under itself, or look for center-cut fillets of even thickness.
  • Swap the asparagus for green beans, broccolini or thin zucchini wedges, all of which roast in about the same time.

Questions and answers

How long does salmon take on a sheet pan?

At 220°C (425°F), fillets about 2.5 cm (1 inch) thick take 10 to 12 minutes. Thinner pieces may need only 8 minutes.

Should the skin stay on?

Yes. The skin protects the flesh from the pan and is easy to lift away after cooking if you prefer not to eat it.

Can I use frozen salmon?

Thaw it in the fridge overnight, then pat it very dry before seasoning. Wet fish steams instead of roasting.
