Shrimp and White Bean Tomato Skillet

This skillet leans on pantry staples: canned beans and tomatoes make a quick, savory base, and shrimp need only a few minutes to cook in it. The beans soften slightly and thicken the sauce, so it is hearty without any cream. A little smoked paprika and thyme give it depth. Serve it in bowls over rice or with toasted bread, and finish with a squeeze of lemon.

Instructions

  1. Pat the shrimp dry and season with a pinch of the salt and the pepper.
  2. Heat 1 tbsp of the oil in a large deep skillet over medium heat. Cook the onion for 5 minutes, until soft. Add the garlic, paprika and chili flakes and stir for 1 minute.
  3. Add the tomatoes, beans, stock, thyme and the remaining salt. Bring to a simmer and cook for 8 minutes, mashing a few beans against the pan to thicken the sauce.
  4. Tuck the shrimp into the sauce in a single layer, scatter the spinach on top and cover. Cook for 3 to 4 minutes, turning the shrimp once, until pink, opaque, loosely curled and 63°C (145°F).
  5. Stir in the lemon juice and drizzle with the remaining oil. Taste and adjust the seasoning.
  6. Scatter with parsley and serve hot in shallow bowls.

Tips

  • For a smoky note, brown 100 g (3 1/2 oz) of diced smoked bacon with the onion in step 2.
  • Chickpeas or butter beans work if white beans are not at hand. Thaw frozen shrimp before adding them.
