Bannock is a simple quick bread eaten across Canada, in Indigenous communities and in many other households, and every family has its own way of making it. This version mixes flour, baking powder, salt and a little oil into a soft dough that is flattened and pan-fried until golden. It takes about 25 minutes and needs no yeast. Serve it warm with jam or honey, or alongside soup or stew. Shapes and additions vary, so treat this as a plain starting point.
Instructions
- Whisk the flour, baking powder, salt and sugar in a large bowl. Stir in the dried fruit if using.
- Drizzle in the 3 tablespoons of oil and rub it into the flour with your fingertips. Stir in the warm water to make a soft dough, adding a splash more if it feels dry.
- Knead gently 5 or 6 times on a floured surface, without overworking it. Pat the dough into a round about 2 cm (3/4 in) thick and 20 cm (8 in) wide.
- Heat the 2 tablespoons of oil in a 25 cm (10 in) skillet over medium-low heat. Cook the bannock for 7 to 8 minutes, until deep golden underneath.
- Flip it and cook for 7 to 8 minutes more, until cooked through and hollow-sounding when tapped.
- Cool for 5 minutes, cut into 6 wedges and serve warm.
Tips
- Keep the heat at medium-low so the center cooks before the outside darkens. If it browns too fast, finish it in a 190°C (375°F) oven for 10 minutes. You can also bake the whole round at 200°C (400°F) for 20 to 25 minutes.
- Handle the dough lightly for a tender result. Grated cheese, herbs or dried berries are common additions.
