Small Roast Beef with Pan Gravy

A big family roast is too much for one or two people, and a small roast solves that. A 900 g (2 lb) piece of topside or sirloin tip feeds four, with leftovers for sandwiches the next day. It is rubbed with garlic, mustard and thyme, roasted hot for a short time to brown, then finished gently so the inside stays evenly pink. The pan juices and a spoonful of flour turn into a quick gravy while the beef rests.

Instructions

  1. Take the beef out of the fridge 1 hour before cooking. Heat the oven to 230°C (450°F) and pat the beef dry.
  2. Mix the mustard, garlic, thyme, salt, pepper and olive oil, and rub the paste all over the beef.
  3. Spread the onions in a roasting pan and set the beef on top. Roast for 15 minutes, until the surface is browned.
  4. Lower the oven to 160°C (325°F) and roast for 40 to 50 minutes more, until a thermometer in the thickest part reads 57°C (135°F).
  5. Move the beef to a board, cover it loosely with foil and rest for 20 minutes. It climbs to about 63°C (145°F), a rosy medium, as it rests.
  6. Set the roasting pan over medium heat. Sprinkle the flour over the onions and juices, stir for 1 minute, then whisk in the wine and stock. Simmer for 5 minutes, scraping up the browned bits, until the gravy thickens. Season to taste.
  7. Slice the beef thinly across the grain, pour any board juices into the gravy and serve.

Tips

  • Tie the roast with kitchen string at 3 cm (1 1/4 inch) intervals so it keeps an even shape and cooks evenly.
  • Cold leftovers make good sandwiches. Slice them very thin and keep them wrapped in the fridge for up to 4 days.
