Smoky Paprika Pork Skewers with Peppers

Pork tenderloin is lean and tender, which makes it an excellent choice for skewers when it is cut into even cubes and not overcooked. This marinade is sweet, smoky and a little sharp: smoked paprika, garlic, honey and cider vinegar, with a spoonful of tomato paste to help it cling and brown. Thread the pork with peppers and red onion and grill for about ten minutes. The skewers are good hot from the grill, or cold in a picnic box.

Instructions

  1. Whisk the marinade ingredients together in a large bowl. Add the pork and stir to coat, then cover and refrigerate for 1 hour, or up to 8 hours.
  2. If you are using wooden skewers, soak them in water for 30 minutes.
  3. Thread the pork, pepper and onion pieces alternately onto 8 skewers, leaving a small gap between the pieces so the heat reaches every side.
  4. Heat a grill to medium-high, or a grill pan over medium-high heat, and oil the grates lightly.
  5. Grill the skewers for 10 to 12 minutes, turning every 3 minutes, until the pork reaches 63°C (145°F) in the center and the vegetables are charred at the edges.
  6. Rest the skewers for 3 minutes and serve with flatbread or rice and a green salad.

Tips

  • Cut the cubes the same size, about 3 cm (1 1/4 inches), so that they cook at the same rate.
  • No grill? Bake the skewers on a lined tray at 230°C (450°F) for 12 to 15 minutes, turning once, then finish them under the broiler for a little char.

Questions and answers

What cut of pork is best for skewers?

Tenderloin stays tender and cooks fast. Boneless loin works too. Shoulder is richer but needs smaller cubes and a little more time.

How do I know when pork skewers are cooked?

A cube should reach 63°C (145°F) in the center and look just faintly pink. Cut one open to check if you have no thermometer.

Can I make the skewers ahead of time?

Yes. Marinate the pork and thread the skewers up to 8 hours ahead, then cover and refrigerate. Cook them straight from the fridge.
