This is a plain skillet dinner that costs little and needs just one pan. Small cubes of pork loin are browned first, then potatoes steam and crisp in the same pan with onion and pepper. Smoked paprika does most of the seasoning, with garlic and a squeeze of lemon at the end for brightness. Cut the potatoes small so they soften in about 20 minutes. Serve with a green salad if you want a lighter side.
Instructions
- Pat the pork dry and toss it with 1/2 tsp of the salt, half the paprika and the black pepper.
- Heat 1 tbsp of the oil in a large skillet over medium-high heat. Brown the pork for 4 to 5 minutes, turning, until golden outside, then move it to a plate.
- Add the remaining oil, the potatoes and 1/4 tsp of the salt. Cook for 5 minutes, stirring now and then, until they begin to brown. Add the water, cover and cook for 8 minutes until nearly tender.
- Uncover, add the onion and pepper and cook for 5 minutes, until the potatoes are crisp at the edges and the vegetables are soft.
- Stir in the garlic, oregano and the remaining paprika and salt for 1 minute. Return the pork and its juices and cook for 3 to 4 minutes, until the pork reaches 63°C (145°F).
- Stir in the lemon juice, scatter with parsley and serve.
Tips
- Pork shoulder works too, but cut it small and allow 15 to 20 more minutes of covered cooking.
- Add a handful of sliced smoked sausage with the onions for a stronger smoky flavor.
Questions and answers
Can I use sweet potatoes in this skillet?
Yes. Cut them to the same size. They cook a little faster, so shorten the covered time by about 2 minutes.
How do I get the potatoes crispy?
Brown them first in a single layer before adding the water, then uncover the pan so the moisture cooks off while they crisp.
Can I reheat the leftovers?
Yes. Reheat them in a hot skillet with a little oil so the potatoes crisp again, rather than using the microwave.
