Spinach Mango Green Smoothie Bowl

A green smoothie bowl is the easiest way to get a big handful of spinach into breakfast without tasting it. Mango and banana carry most of the flavor, lime and ginger keep it fresh, and frozen fruit gives the thick, spoonable texture. Kiwi, seeds and coconut go on top for contrast. It takes five minutes from freezer to table.

Instructions

  1. Blend the almond milk, spinach, lime juice and ginger for about 30 seconds, until the spinach has disappeared and the liquid is bright green.
  2. Add the mango, banana and yogurt. Blend on low, then on high, pushing the fruit down with the tamper or stopping to scrape the sides, for about 1 minute, until thick and smooth.
  3. Spoon into two bowls and smooth the tops.
  4. Top with the kiwi, pumpkin seeds, coconut and hemp seeds, and eat right away.

Tips

  • Blend the greens with the liquid first. That way no flecks of leaf are left once the frozen fruit goes in.
  • Spinach has a very mild flavor. Kale makes a stronger, slightly bitter bowl, so use only half as much and blend for longer.

Questions and answers

Will a green smoothie bowl taste like spinach?

Barely. Mango and banana mask the mild spinach flavor, and the lime brightens it. If you are new to green smoothies, start with 1 cup of loosely packed spinach.

Can I use kale or other greens?

Yes, but kale is earthier and more bitter, so use half the amount, remove the stems and blend for longer. Baby chard and romaine also work.

Is a smoothie bowl filling enough for breakfast?

With the yogurt and seeds, each bowl has about 9 g of protein and 6 g of fiber, which carries many people to lunch. For more staying power, add a spoonful of nut butter or extra seeds.
