Sucuklu Yumurta (Turkish Fried Eggs with Garlic Sausage)

Sucuklu yumurta is a breakfast for people who want something substantial: slices of sucuk, the garlicky, cumin-spiced Turkish sausage, sizzled until the fat runs, with eggs cooked right in that fat. It takes about 15 minutes and one pan, and it is often served straight from the pan on a Sunday morning with tomatoes, olives and fresh bread. No salt is needed, since the sausage seasons the eggs.

Instructions

  1. Heat the oil in a wide nonstick skillet over medium heat. Add the sausage slices in a single layer.
  2. Fry for 2 to 3 minutes per side, turning once, until browned at the edges and the red fat has rendered into the pan.
  3. Lower the heat to medium-low and spread the slices so there are gaps between them.
  4. Crack the eggs into the pan, between and over the sausage slices. Season with the black pepper but no salt, since the sausage is salty.
  5. Cover and cook for 3 to 4 minutes for runny yolks and set whites, or 5 minutes for firmer yolks.
  6. Sprinkle with the pepper flakes and parsley and serve straight from the pan, with bread and tomatoes.

Tips

  • Sucuk is salty and spiced, so taste a slice before you reach for the salt. Most of the time the eggs need none.
  • No sucuk? Use any firm, garlicky smoked beef sausage and add 1/2 tsp ground cumin and a pinch of paprika to the pan to get close to the flavor.
