Tikil Gomen (Ethiopian Cabbage, Potato and Carrot Stew)

Tikil gomen is a mild, golden stew of cabbage, carrots and potatoes scented with turmeric, garlic and ginger. It is one of the vegetable dishes on every Ethiopian fasting platter, offering a gentle, sweet contrast to spicy lentils and berbere-red stews. The vegetables cook in a little oil and water until tender and lightly caramelized at the edges. It reheats well and tastes even better the next day.

Instructions

  1. Heat the oil in a wide pot over medium heat. Cook the onion for 6 minutes until soft, then add the garlic and ginger for 1 minute and the turmeric for 30 seconds.
  2. Add the carrots and potatoes with the water, salt and pepper. Cover and cook for 10 minutes.
  3. Pile the cabbage on top, cover again and cook for 15 to 20 minutes, stirring gently once or twice, until all the vegetables are tender. Add a splash of water if the pot looks dry.
  4. Stir in the jalapeño, if using, for the last 5 minutes.
  5. Taste, adjust the salt and serve warm with injera.

Tips

  • Cut the carrots a little thinner than the potatoes so everything finishes cooking at the same time.
  • Leftovers make a good filling for a sandwich or wrap with a spoonful of mustard.
