Tuna and Sweet Potato Cakes with Lime Yogurt

Mashed sweet potato does two jobs in these cakes: it binds the tuna together and adds a gentle sweetness that works well with lime and cilantro. A handful of breadcrumbs gives structure, and a short chill keeps the cakes from falling apart in the pan. They are cheap, quick and good for lunchboxes. Serve them warm with the yogurt dip and a simple salad.

Instructions

  1. Steam the sweet potato for 12 to 15 minutes, until very tender. Mash with a fork in a large bowl, then let it cool for 10 minutes.
  2. Add the tuna, spring onions, cilantro, cumin, lime zest, egg, half the breadcrumbs, salt and pepper. Mix until combined. The mixture should be soft but hold its shape.
  3. Shape into 8 patties about 2 cm (3/4 inch) thick. Press both sides into the remaining breadcrumbs, then chill for 15 minutes.
  4. Stir the yogurt, lime juice, cilantro and salt together for the dip.
  5. Heat the oil in a large nonstick skillet over medium heat. Fry the cakes in two batches for 3 to 4 minutes per side, until golden and crisp and hot through to 71°C (160°F).
  6. Drain on paper towels and serve warm with the lime yogurt dip.

Tips

  • Roast the sweet potato whole at 200°C (400°F) for 45 minutes instead of boiling it. The mash is drier and the cakes firmer.
  • Canned salmon or cooked, flaked white fish can replace the tuna.

Can I freeze tuna and sweet potato cakes?

Yes. Freeze the shaped, uncooked cakes on a tray, then bag them for up to 2 months. Cook from frozen over medium-low heat for about 6 minutes per side.
