This is the bowl to make when you have rice, a can of tuna and not much energy. The tuna is mixed with a sharp lime and soy dressing instead of mayonnaise, so it tastes fresh rather than heavy. Creamy avocado, crisp cucumber and edamame add texture and color. It is ready in about 25 minutes, most of that the rice cooking and resting, and the components keep well for a packed lunch.
Instructions
- Rinse the rice and cook it with 240 ml (1 cup) water and a pinch of salt for 12 to 15 minutes. Rest it covered for 10 minutes.
- Whisk the soy sauce, lime juice, sesame oil, honey, ginger and chili flakes in a bowl.
- Cook the edamame in boiling water for 3 minutes if using frozen, then drain.
- Flake the tuna into the dressing bowl, add half the dressing and the spring onions and fold gently. Keep the rest of the dressing to one side.
- Divide the warm rice between two bowls. Top with the tuna, avocado, cucumber and edamame.
- Drizzle with the remaining dressing, sprinkle with sesame seeds and serve right away, while the rice is still warm.
Tips
- Squeeze a little lime over the avocado slices, or slice it just before serving, so it stays green.
- For packed lunches, keep the rice, tuna and vegetables separate, and add the avocado and dressing at the last minute.
Questions and answers
Can I use fresh tuna instead of canned?
Yes, but cook it first, for example by searing steaks and slicing them over the rice. Raw tuna is only safe when sold as sushi-grade and handled correctly.
How long does the dressed tuna keep?
Dressed tuna keeps for 1 day in the fridge. The lime softens the texture if it sits longer.
Can I use brown rice or quinoa instead?
Yes. Cook it according to the package and let it cool slightly before topping. Both hold the dressing well.
