Chocolate and raspberry is a pairing that works at breakfast as well as at dessert. Cocoa gives these oats a deep, bittersweet flavor, mashed raspberries add fruity tartness, and chia seeds thicken everything into a spoonable pudding. The recipe is vegan and, with certified gluten-free oats, gluten-free. Make it in jars the night before and top with a few extra berries and a little almond butter in the morning.
Instructions
- Whisk the cocoa powder with 2 tbsp of the soy milk in a bowl until it forms a smooth paste. Whisk in the rest of the soy milk, the maple syrup, vanilla and salt.
- Stir in the oats and chia seeds until evenly coated.
- Mash half the raspberries with a fork and swirl them into the oat mixture.
- Divide between two jars, cover and refrigerate for at least 6 hours, or overnight, until thick.
- In the morning, stir and add a splash of soy milk if the oats are too thick. Top with the remaining raspberries, the almond butter and the chocolate shavings if you like.
Tips
- Frozen raspberries work well. They thaw overnight and bleed a deep pink swirl into the oats. Cherries or strawberries make a good change.
- Check the label on cocoa and chocolate if you avoid dairy, since some are made on shared equipment. Use dairy-free dark chocolate for the topping.
Questions and answers
Do I need chia seeds in overnight oats?
They are optional, but they thicken the oats and keep them creamy for days. Without them, the oats will be a little looser, so use about 2 tbsp less milk for a similar texture.
Why are my chocolate overnight oats gritty?
Cocoa powder clumps if it goes into cold milk dry. Whisk it into a paste with a splash of the milk first, then add the rest.
