A virgin mojito keeps everything people like about the classic cocktail: cool mint, sharp lime and a lot of ice. Without the rum, it is a light and fizzy drink that suits children, drivers and anyone skipping alcohol. Press the mint gently instead of crushing it, because shredded leaves turn bitter. Make it one glass at a time, or muddle a larger batch in a jug and top it up with sparkling water.
Instructions
- Divide the mint leaves and lime wedges between two tall glasses. Add the simple syrup.
- Muddle gently for 8 to 10 seconds, pressing with the end of a wooden spoon to release the lime juice and mint oils. Do not shred the leaves.
- Pour in the lime juice and fill each glass to the top with crushed ice.
- Top with the sparkling water, about 150 ml (2/3 cup) per glass.
- Stir from the bottom with a long spoon to lift the mint and syrup through the ice.
- Tuck a mint sprig into each glass, slap it lightly between your palms first to wake up the aroma, and serve with a straw.
Tips
- No crushed ice? Wrap ice cubes in a clean dish towel and hit them with a rolling pin until broken up.
- For a sweeter version, use lemon-lime soda instead of sparkling water and cut the syrup in half. Taste before adding more.
Questions and answers
Can I make virgin mojitos for a crowd?
Yes. Muddle the mint, lime and syrup in a large jug and chill it. Add ice and sparkling water just before serving so the drink stays fizzy.
Why does my virgin mojito taste bitter?
The mint was crushed too hard or the lime pith was muddled too much. Press gently, and rely on the juice for most of the lime flavor.
Can I use a different sweetener?
Yes. Agave, maple syrup or a sugar-free sweetener all work. Stir a thick syrup into a little warm water first so it mixes into the cold drink.
