Air Fryer Brussels Sprouts with Balsamic and Honey

Brussels sprouts win over skeptics when they are roasted hard instead of boiled. In the air fryer the outer leaves crisp like chips while the centers turn tender, and the whole batch takes about fifteen minutes. A quick glaze of balsamic vinegar and honey adds a sweet, tangy edge that balances their slight bitterness. Serve them beside roast chicken, pork or turkey, or add them to a holiday table.

Instructions

  1. Trim the stem ends of the sprouts, pull off any yellow outer leaves and halve them from top to bottom. Cut very large sprouts into quarters so everything is a similar size.
  2. Toss the sprouts with the olive oil, salt and pepper in a bowl until every piece is coated.
  3. Heat the air fryer to 200°C (400°F) for 3 minutes. Tip in the sprouts and spread them in a single layer, cut side up where you can.
  4. Cook for 8 minutes, shake the basket, then cook for 5 to 7 minutes more. The outer leaves should be dark and crisp and a knife should slide into the centers.
  5. Meanwhile, stir the balsamic vinegar and honey together in a small bowl until smooth.
  6. Tip the hot sprouts into a warm bowl, drizzle with the glaze and toss. Serve at once while the leaves are crisp.

Tips

  • Add toasted chopped walnuts or pecans, or a handful of dried cranberries, for a festive version.
  • Vegan? Swap the honey for maple syrup. The glaze works just as well.
