Asparagus and eggs are a natural pair, and a frittata is an easy way to serve them together to a crowd. Here, spears of asparagus are sautéed with spring onions and ham, then set in a thick, tender layer of eggs and cheddar. It is a good Easter or spring brunch dish, and it is just as welcome at room temperature as hot from the oven. Cut it into wedges and serve it with a leafy salad.
Instructions
- Heat the oven to 190°C (375°F). Whisk the eggs, milk, salt, pepper and two thirds of the cheese in a bowl until smooth.
- Melt the butter with the oil in a 25 cm (10 inch) ovenproof nonstick skillet over medium heat. Add the asparagus and cook for 4 minutes, stirring now and then, until bright green and just tender.
- Add the spring onions and ham and cook for 2 minutes, until the ham is lightly browned.
- Reduce the heat to medium-low and spread the filling evenly. Pour in the eggs and cook without stirring for 2 to 3 minutes, until the edges start to set.
- Sprinkle with the remaining cheese and transfer to the oven. Bake for 10 to 12 minutes, until puffed, golden and just set in the center.
- Rest for 5 minutes, then scatter with dill, cut into wedges and serve warm or at room temperature.
Tips
- Use thin asparagus. If the stalks are thick, halve them lengthwise so they cook through in the same time.
- Leave out the ham and add 100 g (3.5 oz) crumbled feta for a vegetarian frittata, or use broccoli florets or green beans when asparagus is out of season.
Questions and answers
Can I use thick asparagus in a frittata?
Yes, but slice the stalks in half lengthwise and cook them a minute longer so they turn tender. Thin spears need no extra prep beyond trimming.
