Weißwurst with Sweet Mustard (Bavarian White Sausage Breakfast)

Weißwurst, the white sausage of veal and pork flavored with parsley, lemon and mace, is the centerpiece of a Bavarian late breakfast. Tradition says it should be eaten before noon, with sweet mustard, a soft pretzel and a wheat beer. The sausages are heated in hot water that never boils, since boiling splits the delicate skin. The sweet mustard takes five minutes to stir together.

Instructions

  1. Stir the mustard, brown sugar, vinegar and allspice together until the sugar dissolves. Cover and leave for 1 hour so the flavors blend and the sugar softens.
  2. Bring the water to a boil in a large pot, then take it off the heat and let it sit for 2 minutes. The water should be about 80°C (175°F), well below a boil.
  3. Lower the sausages gently into the water, cover the pot and leave them for 10 to 15 minutes, until hot throughout (71°C / 160°F) and firm.
  4. Lift the sausages out with a slotted spoon and serve them in a warm bowl with a ladle of the hot water to keep them warm.
  5. To eat, slit the skin lengthwise and peel it off with a knife and fork, or suck the filling out of the skin the Bavarian way. Dip each bite in the sweet mustard and eat with the pretzels.

Tips

  • Never let the water boil, because the thin natural casing splits. Keep the pot just below a simmer and use a thermometer if you have one.
  • The sweet mustard keeps for 2 weeks in the fridge and is also good with Leberkäse, roast pork and cold cuts.
