Berry Banana Smoothie Bowl

A smoothie bowl is a smoothie made thick enough to eat with a spoon, then topped like breakfast. Frozen berries and banana blend into a deep purple, soft-serve texture, and yogurt adds creaminess and a little protein. The trick is using as little liquid as you can, so the bowl holds the toppings up instead of swallowing them. It takes five minutes and one blender.

Instructions

  1. Pour the milk into the blender, then add the yogurt, frozen berries, frozen banana and honey.
  2. Blend on low, pushing the fruit down with the tamper or stopping to scrape the sides, then increase to high. Blend for about 1 minute, until thick and smooth like soft-serve. Add milk a tablespoon at a time only if the blades stall.
  3. Scoop into two bowls and smooth the tops.
  4. Arrange the sliced banana, blueberries, granola, chia seeds and coconut on top and eat straight away, before the bowl melts.

Tips

  • Freeze peeled banana slices ahead of time and keep the liquid to a minimum. A bowl that is thick enough to hold toppings is thicker than a smoothie you would drink.
  • If the blender struggles, stop and stir rather than adding lots of liquid. A thin bowl cannot be saved without more frozen fruit.

Questions and answers

How do I make a smoothie bowl thick?

Use fully frozen fruit, very little liquid and a strong blender or food processor. Add the liquid a spoonful at a time, and stop as soon as the blades catch.

Can I make a smoothie bowl without banana?

Yes. Use frozen mango, a handful of frozen cauliflower or half an avocado instead. The texture is a little less creamy, so add a touch more honey.

Can I prepare a smoothie bowl ahead of time?

You can freeze the blended base in a container for up to 2 weeks. Thaw it for 15 minutes at room temperature, stir and add the toppings fresh.
