Berry Yogurt Popsicles

Yogurt popsicles are a simple frozen snack made from berries, yogurt and a little honey. The yogurt makes them creamier and less icy than fruit-only popsicles, and it adds a gentle tartness. Blend everything smooth for an even pink pop, or swirl the berry puree through the yogurt for a marbled look. They need only ten minutes of work and a few hours in the freezer, and children can help.

Instructions

  1. Blend 200 g of the berries with the honey and lemon juice until smooth. Chop the remaining 50 g of berries into small pieces.
  2. Stir the yogurt and vanilla together in a bowl until smooth.
  3. For a marbled look, swirl the berry puree through the yogurt with a spoon without fully mixing. For an even pink color, stir it in completely. Fold in the chopped berries.
  4. Spoon the mixture into 6 popsicle molds, tapping the molds on the counter to release air bubbles. Insert the sticks.
  5. Freeze for at least 5 hours, until solid. To release a popsicle, run the outside of the mold under warm water for 10 seconds and pull gently.

Tips

  • Use full-fat yogurt for the creamiest, least icy popsicles. For a dairy-free version, use coconut yogurt and swap the honey for maple syrup.
  • No molds? Use small paper cups and wooden sticks. Freeze for 1 hour first so the sticks stand upright, then insert them.
