A glazed baked ham is the centerpiece of many American Easter and Christmas tables. Most hams sold for baking are already cooked, so the job is to warm the meat gently without drying it and to build a shiny, caramelized glaze. This one uses brown sugar, mustard, orange juice and a little honey, brushed on in layers over the last 45 minutes. Leftovers make excellent sandwiches, soups and breakfast hash.
Instructions
- Heat the oven to 150°C (300°F) with a rack in the lower third. Set the ham cut side down on a rack in a roasting pan and pour the water into the pan.
- Score the surface in a diamond pattern, cutting about 1 cm (1/2 in) deep and 3 cm (1 1/4 in) apart. Press a clove into each intersection if you like.
- Cover the pan tightly with foil and bake for 1 1/2 hours.
- Meanwhile, simmer the glaze ingredients in a small saucepan for 5 minutes until syrupy.
- Uncover the ham and raise the oven to 200°C (400°F). Brush with a third of the glaze and bake for 15 minutes. Repeat twice more, until the glaze is glossy and a thermometer in the thickest part, away from the bone, reads 63°C (145°F).
- Tent the ham with foil and rest for 20 minutes. Carve it and serve with the skimmed pan juices.
Tips
- Check the label. A ham that is not fully cooked must reach 63°C (145°F) and rest for 3 minutes. Spiral-cut hams dry out faster, so shorten the time by about 30 minutes.
- Pineapple juice can replace the orange juice, and maple syrup can replace the honey, for a different flavor.

Can I use a boneless or spiral ham?
