Dan bing is among the most common breakfasts in Taiwan, sold from small stalls and breakfast shops from early morning. A thin batter of flour and starch is cooked into a soft crepe, topped with beaten egg and scallion, flipped, rolled and sliced into neat pieces. It is served with a drizzle of sweet soy paste or chili sauce and takes only minutes once the batter has rested.
Instructions
- Whisk the flour, starch, salt, water and 1 tbsp oil until completely smooth and about as runny as thin cream. Rest for 30 minutes, or up to 8 hours in the refrigerator.
- Beat the eggs with the scallions and the 1/4 tsp salt. Heat a 22 cm (9 in) nonstick skillet over medium-low heat and brush with a little oil.
- Stir the batter, then pour in about 80 ml (1/3 cup). Swirl to coat the pan thinly. Cook for 1 to 2 minutes until the edges lift and the surface looks set.
- While the top is still slightly wet, pour a quarter of the egg over the crepe and tilt the pan to spread it. Cook for 1 minute until the egg is mostly set.
- Flip the crepe so the egg side faces down and cook for 30 to 45 seconds, until the egg is fully set and lightly golden in spots.
- Slide the crepe onto a board egg side up. Roll it up tightly, slice into 4 pieces on the diagonal and drizzle with the sweet soy paste and a little chili sauce. Repeat with the remaining batter and egg.
Tips
- Keep the heat at medium-low. The crepe should stay soft and tender with a few golden spots, not turn crisp or dark.
- If the batter thickens as it stands, whisk in 1 to 2 tablespoons of water. A thick batter gives a doughy, bready crepe.

What is dan bing?
Dan bing is a thin Taiwanese crepe made from a flour and starch batter, cooked with a layer of egg, then rolled and sliced. It is a typical breakfast, served with sweet soy sauce or chili sauce.
What fillings can I add to dan bing?
Corn kernels, sautéed mushrooms and finely shredded cabbage all work well. Scatter them over the egg while it is still slightly wet, press them in lightly so they stick, then roll.
Can I make the batter ahead?
Yes. Keep it covered in the refrigerator for up to 8 hours. The starch settles, so whisk it again before you start cooking and thin it with a spoonful of water if needed.
