Fairy Bread (Sprinkle-Topped Buttered Bread)

Fairy bread is the sweet sandwich found at nearly every Australian children's birthday party, somewhere between the sausage rolls and the lamingtons. It is nothing more than soft white bread, butter and a heavy shower of rainbow sprinkles, known locally as hundreds and thousands. Spread the butter right to the edges so the sprinkles stick, and serve soon after making, because the colors bleed into the butter if the bread sits for hours.

Instructions

  1. Lay the bread slices on a board and spread each one thinly with butter, right to every edge. The butter is the glue that holds the sprinkles.
  2. Tip the sprinkles onto a plate. Press each buttered slice, butter side down, into the sprinkles, or scatter them over generously. Shake off the excess.
  3. Trim off the crusts if you like. With a sharp knife, cut each slice into 4 triangles.
  4. Arrange on a platter and serve within an hour.

Tips

  • Use nonpareil sprinkles, the tiny round ones. Chocolate sprinkles and larger sugar shapes slide off and do not stick as well.
  • Use butter that is soft but not melted. Cold butter tears the bread, and melted butter soaks in and leaves less on the surface for the sprinkles to cling to.

Questions and answers

Why do the sprinkles bleed color into the butter?

Rainbow sprinkles contain food coloring that dissolves in moisture. Serve the bread soon after making it and keep the butter layer thin so there is less for the color to run into.

Can I make fairy bread ahead for a party?

Make it no more than an hour before serving. After that the bread dries and the sprinkles start to run, so assemble it just before the guests arrive.

Can I use another spread instead of butter?

Butter or a plant-based spread works best. Cream cheese also holds sprinkles well, though it makes a richer snack.
