Frittatensuppe (Austrian Pancake Strip Soup)

Frittatensuppe is clear beef broth with ribbons of thin, savory pancake, the kind of soup that opens many Austrian Sunday meals. The batter is made from flour, eggs and milk, fried into crepes, rolled up and cut into narrow strips that float in the hot broth with a sprinkle of chives. Everything rests on the broth, so use a well-flavored homemade one if you can, and keep the pancakes thin and tender.

Instructions

  1. Whisk the flour, eggs, milk, salt and nutmeg into a smooth, thin batter with no lumps. Stir in the chopped chives, then let the batter rest for 20 minutes.
  2. Heat a 20 cm (8 inch) non-stick pan over medium heat and brush lightly with oil. Pour in a thin layer of batter and swirl to cover the base.
  3. Cook for 1 to 1 1/2 minutes until the top is set and the underside is pale golden, then flip and cook for 30 seconds more. Slide onto a plate and repeat, brushing with a little oil as needed, to make 6 to 8 pancakes.
  4. Let the pancakes cool slightly, then stack them, roll up tightly and cut across into strips about 5 mm (1/4 inch) wide. Shake the strips loose.
  5. Bring the broth to a simmer and season with salt. Divide the pancake strips among warm bowls.
  6. Ladle the hot broth over the strips, sprinkle with chives and serve right away.

Tips

  • Make the pancakes ahead and keep them covered in the fridge for 1 day. Cut the strips just before serving so they do not dry out.
  • Add the strips to the bowls, not the pot. Strips that simmer in the broth turn soggy and cloud the soup.

Questions and answers

Can I make Frittatensuppe with vegetable broth?

Yes. Use a strong, well-seasoned vegetable broth and the soup becomes vegetarian. Add a pinch of nutmeg and some herbs to boost the flavor.

What is the difference between Frittatensuppe and egg drop soup?

In Frittatensuppe, thin pancakes are cooked first, rolled and cut into strips that go into clear broth. In egg drop soup, beaten egg is stirred straight into the simmering broth.

Can I freeze Frittatensuppe?

Freeze the broth and the pancake strips separately, for up to 3 months. Thaw the strips in the fridge and put them in bowls before adding the hot broth.
