Lamb Burgers with Feta and Mint

Lamb has enough flavor to carry a burger without much help, and a little feta and mint is all it needs. The feta melts into the meat as it cooks, leaving salty, creamy pockets, and fresh mint keeps the richness in check. Shape the patties gently, cook them in a hot pan or on the grill and finish with a quick yogurt spread, thin cucumber and red onion. They are juicy, so serve them with napkins.

Instructions

  1. Mix the lamb, feta, mint, garlic, oregano, salt and pepper with your hands until just combined. Do not overwork the meat.
  2. Divide the mixture into 4 portions of about 175 g (6 oz). Shape each into a patty about 10 cm (4 inches) wide and 2 cm (3/4 inch) thick, with a shallow dimple in the middle. Chill for 15 minutes.
  3. Stir the yogurt, lemon juice, garlic and salt together in a small bowl.
  4. Heat the oil in a large skillet over medium-high heat. Cook the patties for 5 minutes per side, until browned and a thermometer reads 71°C (160°F).
  5. Rest the patties for 3 minutes while you toast the buns.
  6. Spread the buns with the yogurt, then add lettuce, the patties, cucumber and onion and serve.

Tips

  • Lamb is fatty, so do not press the patties down in the pan or the juices will be lost.
  • Goat cheese can replace the feta. Chopped olives add an extra salty bite.
