Full Irish Breakfast

A full Irish breakfast is a plate meant to carry you through a long day: pork sausages, back bacon, black and white pudding, a fried egg, grilled tomato, mushrooms and a slice of soda bread. Each element is simple, and the skill is in the timing so everything lands hot. Black pudding is a spiced blood sausage, and white pudding is a similar sausage made with oatmeal.

Instructions

  1. Heat the oven to 100°C (210°F) and put in four plates to warm. Heat the broiler to high.
  2. Heat 1 tbsp of the oil in a large skillet over medium-low heat and fry the sausages for 15 to 18 minutes, turning often, until browned and cooked through (71°C / 160°F). Keep them warm in the oven.
  3. Put the tomato halves cut side up on a tray, season with salt and pepper and broil for 6 to 8 minutes, until soft and lightly charred.
  4. Fry the mushrooms in the butter in a second pan for 5 to 6 minutes until golden. Season and keep warm.
  5. Fry the bacon in the sausage pan for 3 to 4 minutes per side. Fry the black and white pudding for 2 to 3 minutes per side, until crisp at the edges.
  6. Wipe the pan, heat the remaining oil and fry the eggs for 2 to 3 minutes, to your liking.
  7. Divide everything among the warm plates with the soda bread and beans and serve at once.

Tips

  • Cook the sausages slowly. A high heat browns the outside before the middle is done, and they burst.
  • No black pudding? Leave it out or replace it with extra bacon, but try to find white pudding. Many butchers and some supermarkets stock both.
